Thanks to our good Friend Paolo, we have found this trattoria, hidden from the eyes of tourists but not far from touristic places such as Santa Maria Maggiore and San Giovani. Just a door, a small sign, some steps take you under the level of the street and then you have
very good traditional food, smiling people and some unique dishes. Their speciality? Amatriciana in flames!
You will be surprised to see them setting a fire
inside either a pecorino and a parmiggiano and mixing your just prepared pasta from the pan into the melted cheese still in flames! Apart of the impression, the result is optimum. Once you taste it, you will still return for a new round at every possible opportunity!
