The best Carbonara ever- Maccheroni
Not far from Pantheon but far from being touristic, there is Trattoria Maccheroni. Not big signs, no need for advertisement, you may pass it without noticing! Still, it is a meeting place for Romans mostly actors or generally artists. Inside, you can see your dish being prepared and learn some of the secrets of the Italian cuisine!

Just outside Rome, in Colli Romani, you turn back in time into and old fassion super traditional osteria, where everybody are friends, share the tables, the laughters and the fun of excellent meals at low prices. The porchetta is a MUST but everything will attract your attention!

Amatriciana in Flames - Vecchia Roma
Thanks to our good Friend Paolo, we have found this trattoria, hidden from the eyes of tourists but not far from touristic places such as Santa Maria Maggiore and San Giovani. Just a door, a small sign, some steps take you under the level of the street and then you have very good traditional food, smiling people and some unique dishes. Their speciality? Amatriciana in flames!
